Creating a Colorful Table for the Holidays

Making a festive and elegant table for your holiday feast is a given, but consider using a variety of colorful vegetables and fruits to brighten up your spread as well.  By adding sautéed red peppers, onions and mushrooms to bowls of green vegetables, you can introduce a splash of color and additional nutrients for your guests.

Involve your young guests in helping to choose vegetables in a variety of colors at the store.  By involving the children in these important decisions, they will feel a sense of pride and be more willing to try these new vegetables.

“Half of a meal should comprise fruits and vegetables that consist of a variety of colors,” said Vilma Andari, president and founder of NutraHealthFood and a spokeswoman for the American Heart Association. “The other two quarters should be whole grains and healthy proteins.”

Heart-healthy colorful veggies include sweet potatoes, Brussel sprouts and acorn squash.  Apples and nuts are also healthful and provide texture and variety to any holiday spread.

Heart Healthy Recipes

As you look for seasonal, colorful recipes to brighten up your table, here are some heart healthy ones to consider:

Rosemary Balsamic Roasted Vegetables


  • Cooking Spray
  • 1/2 lb. Brussels sprouts, brown ends trimmed off and cut in half
  • 1/2 medium cauliflower, cut into florets
  • 4 medium carrots, peeled and sliced (1/4 inch rounds)
  • 1/2 lb. turnips, peeled and chopped into 1/2 inch cubes
  • 1 small sweet potato cut into 3/4 inch cubes
  • 3 Tbsp. balsamic vinegar
  • 3 tsp. extra virgin olive oil
  • 2 Tbsp. fresh, chopped rosemary
  • 2 clove fresh, minced garlic
  • 1 tsp. onion powder
  • 1/2 tsp. pepper
  • 1/4 tsp. salt


  1. Preheat oven to 375.
  2. Spray 9 x 13 baking dish with cooking spray.
  3. Thoroughly wash all vegetables, cut and toss together in large bowl.
  4. In small bowl, whisk together vinegar, oil, rosemary, garlic, onion powder, pepper and salt.  Pour over vegetable mixture and toss well.
  5. Pour vegetable mixture into prepared 9 x 13 baking dish.  Bake in preheated oven for 30-35 minutes, stirring once, until all vegetables pierce easily with a fork.

Apple Bread Pudding


  • Cooking spray
  • 1 whole egg
  • 1 egg white
  • 1 cup skim milk
  • 2 Tbsp. brown sugar
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • ½ tsp cloves or allspice
  • 6 slices light, whole-grain or multgrain bread, cubed
  • 3 medium apples, cored, cut into 1/2 inch cubes
  • Optional:  1/2 cup of any one of the following:  raisins, dried cranberries, fresh or dried blueberries, chopped walnuts, pecans or almonds


  1. Pre-heat oven to 350.
  2. Spray 9 x 9 baking dish with cooking spray.
  3. In large bowl, whisk together egg, egg white, milk, brown sugar, vanilla, cinnamon and cloves.
  4. Add bread and apple cubes.  Add fruit or nuts if desired.  Mix well.
  5. Pour mixture in to prepared baking dish and bake in preheated oven for 40-45 minutes

Festive Turkey Rice Salad

Great for using up holiday leftovers!


  • 2 Tbsp. rice vinegar
  • 2 Tbsp. lime juice
  • 1 Tbsp. olive oil
  • 1 Tbsp. honey
  • 1 tsp. ground ginger
  • 3 1/2 cups cooked wild or brown rice (Or quick-cooking couscous)
  • 1 1/2 cups chopped, boneless, skinless, cooked turkey breast
  • 1/3 cup dried cranberries
  • 1 bunch chopped green onions ( 1/2 cup)
  • Optional:  use up leftover peas or veggies of your choice in the salad.


  1. In a small bowl, whisk together the vinegar, lime juice, oil, honey and ginger; set aside.
  2. In a large bowl, combine the rice, turkey, cranberries and green onion.  Toss with ginger dressing.
  3. Refrigerate until serving.
